Fibre-Filled Flaxseed and Prune Muffins


These hearty muffins feature Flax Seeds and Prunes, both which contain tons of fibre. Increased fibre in your diet can help with weight loss, aid in regular digestion and may help prevent type 2 diabetes and heart disease.


Ingredients:


3 cups all-purpose flour

2 tablespoons organic ground flaxseed meal (if you don’t have ground flaxseed, just whole seeds in blender or food processor)

1/4 cup brown sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon vanilla sugar (Available in the German section in grocery stores)

2 large eggs

1 cup cold milk

1/2 cup butter, melted

1 cup dried, pitted, prunes – diced


Directions:

Preheat oven to 400 degrees.


Dice up prunes (this is a very, very sticky, but worthwhile process).


In a large bowl, mix flour, flaxseed meal, sugar, baking powder, salt, and vanilla sugar.

In another medium bowl, whisk cold milk and melted butter. Add eggs and whisk until mixed (the first time I made this, I mixed all three at the same time and the butter curdled. Whoops. Definitely do not recommend).


Add wet ingredients to dry and add prunes. Mix until incorporated, do not over mix.

Spoon batter into paper or butter lined 12 cup muffin tin.


Bake in preheated oven for 15-20 minutes, depending on your oven. Insert fork into a muffin to check for doneness.
